F\u00fcr das Beef Wellington verwendet man Rinderfilet, welches zuerst mit Duxelles (ganz fein gehackte Champignons) und anschlie\u00dfend mit Bl\u00e4tterteig umh\u00fcllt wird. Es wird meist zu festlichen Anl\u00e4ssen serviert.<\/p>\n<h2><strong>Beliebte Beilagen<br \/>\n<\/strong><\/h2>\n<p>Als Beilage hat man fr\u00fcher eine Demiglace und geschmorte Schwarzwurzeln serviert. Heutzutage sind unterschiedliche Beilagen sowie meist eine Madeira- oder Tr\u00fcffelsauce anzutreffen.<\/p>\n<h2><strong>Geschichtliches zum Beef Wellington<\/strong><\/h2>\n<p>Es gibt einige Ungereimtheiten \u00fcber die Entstehung. Die Engl\u00e4nder beharren das Beef Wellington zu Beginn des 19. Jahrhunderts erfunden zu haben, doch angeblich. soll das Gericht von dem Schweizer K\u00fcchenchef Charles Senn anl\u00e4sslich der Z\u00fcrcher Internationalen Kochkunstausstellung 1930 kreiert worden sein. Es erhielt seinen Namen zu Ehren Arthur Wellesley, des Herzogs von Wellington. Nach ihm wurde nicht nur das Filet benannt, sondern auch die Hauptstadt Neuseelands.<\/p>\n<p>Arthur Wellesley, 1. Duke of Wellington, soll das in Teig gegarte Fleisch im Baskenland kennengelernt haben. Die Legende sagt, dass er 1813 nach der Schlacht von Vitoria in einem Bauernhaus eingekehrt ist, wo ihm die B\u00e4uerin ein Filet im Teigmantel serviert hat. Das soll von da an sein Lieblingsessen gewesen sein.<\/p>\n<p>Doch das Beef Wellington kann jedoch eigentlich nicht von Charles Senn erfunden worden sein, da es bereits um 1900 Rezepte in mehreren deutschsprachigen Kochb\u00fcchern dar\u00fcber gab. Es ist vielmehr eine Abwandlung des \u00e4lteren franz\u00f6sischen Gerichts Filet de boeuf en
